Introduction

You can use what ever combination of beans you have on hand. You can use what ever combination of beans you have on hand.
Number of Servings: 8

Ingredients

    1 can red kidney beans
    2 cans pinto beans
    3 1/2 cups corn (about 4 ears)
    1 1/2 cups chopped onions
    1 can fire roasted diced tomatoes
    1 can diced tomatoes
    2 small cans V8, low sodium
    1 can chicken broth, fat-free and lower sodium
    granulated garlic, chili powder, cumin, mexican oregano, and salt to taste

Tips

Initially, do not add salt. Just before serving, check saltiness and if needed, add at that time.


Directions

Dump all the ingredients into crock pot. Cook on low for 6 hours. Taste, and adjust seasoning as needed.
