Ingredients

500 grams lean beef minced
2 carrots grated
1 brown onion diced
2 zucchini grated
2 potatoes grated and water squeezed out
1 cup parsnip grated
1 cup water
2 beef stock cubes crumbed
1 tbs cornflour
11 sheets Filo pastry
Salt and Pepper
Canola Cooking spray
Directions
Pre heat oven to 180c
Coat pie plate with cooking spray
Brown onion and mince
Add veggies and ½ cup of water & stock cubes
Bring to boil, cover and simmer for 25 mins or until veggies are tender adding more water if necessary
Thicken with cornflour dissolve in a little water, ensuring that the mixture is not runny.
Season to taste
Cool slightly while preparing the pastry
Line the pie plate with 6 filo sheets, lightly spraying the filo in-between each layer.
Fold pastry in to shape dish. Pour filling into pastry and top with remaining sheets of filo spraying in-between & on top
Bake for 20 or so minutes or until golden brown.
