Ingredients

    2 eggs, beaten
    1/3 cup chopped onion (sweet)
    1/2 medium baby zucchini
    1/2 medium summer squash (yellow squash)
    12 cherry tomatoes
    2 Tablespoons water
    1/2 cup shredded mozzeralla
    4 Tablespoons Chi Chi's medium salsa

Directions

Preheat broiler. Heat skillet at medium heat with olive oil, add onions, chopped zucchini and summer squash.Cover and saute for 2 minutes. Add cherry tomatoes, saute another minute or two. Pour eggs over and reduce heat to low and sprinkle cheese over. Cover and cook for 2 minutes. Remove from heat and remove cover and place under broiler until the eggs are set and the cheese is melted. Serve with salsa.
