Ingredients

    1/2 Cup Rolled Oat Flakes
    6 Egg whites
    1 Tbsp Unsweetened Apple Sauce
    1 Packet Stevia {1s=.5g; 2s=1g=per packet}, 1 gram
    1/4 Tsp Pumpkin Pie spice (or mix of nutmeg & cinnamon)
    2 Tbsp Flax Seed Meal (ground flax)
    1 Tbsp Chia seed

    Optional
    Chopped apples
    Berries (chopped to bite sized)
    Other fruit

Tips

Important to press fruit into batter so that when you flip the pancake the whole thing gets cooked.

Don't add the chia seeds too soon as they will thicken the batter and you want it pourable.

If too thick add a little water.


Directions

Add oats, flax seed meal, stevia and spice to blender. Blend until oats are powdered (or close to it).

Add egg whites and apple sauce. Pulse or blend to combine.

Set non stick pan to heat with spray.

Add Chia seeds, once ready to make pancakes or just sprinkle on batter in pan as chia seeds will thicken the batter.

Once pan is hot pour half of batter into pan add fruit if using making sure to press down into batter.

Once edges are cooked and bottom is lightly browned flip over and cook other side. Make sure you press the pancake down so it cooks.

Enjoy by itself or with Maple syrup.
