Ingredients

    A lot of the ingredient amounts above were estimates based on what SparkPeople would let me select. Here is a better list to use:

    2 15 oz cans lima beans (drained and rinsed)
    1 15 oz can black beans (drained and rinsed)
    1 15 oz can kidney beans (drained and rinsed)
    4 cans vegetable broth
    1 large onion, diced
    2 - 3 bell peppers, color up to you, diced
    2 large tomatoes diced, or can if preferred
    1 C flour
    1 packet Lawry's Taco Seasoning, or equivalent

Tips

You can make a thinner brother instead of gravy by cutting the amount of flour. If you are concerned, start with 1/4 a cup, and add in more as you get closer to the end cook time to thicken it to your liking.


Directions

Drain the cans of beans into a strainer one by one, and rinse well. Pop them into the crock pot. Add sliced onions, peppers and tomatoes.

Pour in the vegetable broth, the slowly whisk in the flour. Add the taco seasoning and mix well. Cook for four hours on low.

Serving Size: It can make 8 - 10 servings, depending on how much you dish out.
