Ingredients

2 cups white flour
1/2 cup granulated sugar
1 tablespoon baking powder
1/4 cup ground flax seed
1 cup dried cranberry trail mix
3/4 cup Kifir low fat plain yogurt
1/4 cup canola oil
1/4 cup egg substitute
2 cups shredded fresh zucchini
Tips
I was looking for a way to use up zucchini from the garden and some trail mix, this looked like a tasty choice! Reduce the fat by eliminating chocolate from the trail mix.
Directions
In a large bowl, mix first 5 ingredients well.
In a separate bowl, combine kefir, oil, egg substitute and shredded zucchini.
Mix wet ingredients into dry ingredients and stir until just mixed.
Scoop into muffin tins prepared with baking cups or cooking spray.
Bake in a pre-heated 400 degree oven for 25 minutes or until the tops of the muffins are browned.
