Ingredients

    1 cup Minute Rice
    1 lb. Ground Beef
    1 egg, slightly beaten
    2 tbsp Onions, minced
    1 tbsp Parsley, chopped
    1-1/2 tsp salt
    1/4 tsp nutmeg
    Dash of pepper
    1/2 cup milk
    1 can Campbell's Cream of Mushroom soup (10.75 oz can)
    2/3 cup water
    1 tbsp lemon juice

Tips

You can substitute Cream of Celery soup instead of Cream of Mushroom soup.

For less sodium, substitute with low sodium versions of the soup or omit/reduce the amount of salt.


Directions

Mix soup, water and lemon juice and place to side.

In a large mixing bowl, thoroughly mix:
Minute Rice, Ground Beef, beaten egg, onions, parsley, salt, nutmeg, pepper and milk.

Form the meatball mixture into 1.5-2 inch balls and place in a pan. Pour soup mixture on top of the meatballs.

Simmer for 5 minutes, turn meatballs and simmer for another 5 minutes.

Serving Size: Makes 5 servings, four meatballs per serving.
