I'm trying to find ways to lower my carb intake and sneak in vegetables into our breakfast.. I'm trying to find ways to lower my carb intake and sneak in vegetables into our breakfast..
Number of Servings: 2

Ingredients

    1 small carrot
    1 small zucchini
    1 small potato
    1 tsp creole seasonings
    3-4 tablespoons grapeseed oil for frying. Add more if needed.
    black pepper for finishing


Tips

serve with scrambled tofu!


Directions

Run all 3 ingredients through your food processor's grate feature, then rinse and dry. If no food processor, grate standard. Then mix with creole seasonings.
I fry this up on medium heat for about 15 minutes, flipping every 5 or so minutes. Blot on papertowel (it will amaze you) and serve!
