Ingredients

2 lg heads of Cauliflower (or 4 cups)
1 lb. turkey bacon
1 lg Sweet Onion
1 Tbsp. minced garlic
1/2 cup 2% milk
3 Tbsp. unsalted butter
1 cp low fat Mozzerella Cheese
1 cp monterey cheese
1 cup low sodium Chicken Broth
1/2 Tbsp Garlic Salt
1/2 Tbsp Black Pepper.
Plain Greek Yogurt and Greek onions for Garnish.
Directions
Peel, break apart and boil cauliflower till fork tender
Meanwhile, chop and brown turkey bacon, set aside. In same pan, saute' diced sweet onion and garlic.
Drain cauliflower and add butter and milk and blend till smooth. add bacon, onion, cheeses and broth. Bring to a boil then reduce heat and let simmer for 10 minutes.
add 1 Tbsp of Greek yogurt and sprinkle on green onion for garnish.
Serving Size: makes 8 1 cup servings
