Introduction
I make these low-sugar nutritious cookies for my family on a regular basis. TONS of possible variations- I even used up our oatmeal infant cereal in place of the oatmeal for the babies! Try it with other kinds of cooked and mashed fruit (or vegis?) instead of the banana or try adding raisins or other dried fruit- maybe even chocolate chips! Ingredients

1 cup all purpose flour (you can use unbleached or cracked wheat flour for additional nutrition)
.5 tsp baking soda
.75 tsp cinnamon
.25 tsp salt
.75 cup vegetable shortening
.5 cup Truvia (sugar mixture for baking) (or use 1 cup sugar)
1 egg
3 bananas (really ripe and mush- best if pureed first)
2.25 cups infant oatmeal cereal (if using rolled oats, use 1.75 cups oats and 1.5 cups flour)
Tips

Directions
Preheat oven to 350
Combine flour, salt baking soda and cinnamon in a small bowl.
Cream shortening and sugar
Add in bananas and egg.
Gradually add dry ingredients and mix well.
Drop by teaspoons full on ungreased cookie sheet, 1.5 inches apart.
Bake 15 minutes or until lightly browned.
Cook on rack.
ENJOY!!
Freeze any cookies that will not be eaten in a week to enjoy later.
Serving Size: make 5 dozen bite size cookies
