Ingredients

    Olive Oil, 1 tbsp
    Asparagus, fresh, 24 spear, medium (5-1/4" to 7" long) - cut into 1" diagonal pieces.
    Garlic, 3 cloves - minced
    Tomato, grape or cherry (3oz = appro 12 tomatoes), 9 oz - cut in half
    * grated cheese, pecorino romano, 8 tbsp
    *Diamond Kosher Salt (1 tsp), .5 serving
    *black pepper, coarse ground, 0.5 tsp (
    Egg, fresh, 1 large
    *365 Organic Whole Wheat Penne Pasta, 4 cup
    *Basil, fresh, 0.25 cup - torn or roughly chopped.

Directions

Bring 3 Qrts water to boil in pot. Heat a large skillet over med-high heat. Add oil and swirl pan to coat. Add asparagus saute 3 mins. Add garlic - cook another 1 min. Add tomatoes - cook 5-6 mins or until tomatoes have become tender but not mushy. Combine cheese, salt, pepper and egg in bowl and whisk. Cook pasta in boiling water 10 mins or until al dente. Drain and imediately toss with egg mixture. add sautueed tomatoe mix. Serve and spring with basil.
