Number of Servings: 12

Ingredients

    2 Small packages of chicken thighs, boneless and skinless
    2 cans black beans reduced sodium
    1 can red kidney beans (dark or not) Reduced Sodium
    1 cup cooked brown rice
    1/2 cup La Victoria Salsa Medium-hot
    1.5 Cup Water
    1 small onion diced
    Pinch of CowBoy Rub (McCormick Grilling Rub)
    Sprinkle of garlic powder
    1/4 cup Mrs. Dash Onion & Herb (Salt free!)


Tips

Shred the thighs once it is cooked, to get more out of the chicken! Add hot sauce for a kick...remember to look at the sodium content of it though!


Directions

Place all ingredients in order according to ingredients list into crockpot/slow cooker
Chicken, then rinse beans and corn in a strainer...then place in crock pot
Then cooked rice on top, cover with water
then add the onions ontop

Serving Size: makes 12-15 servings
