Ingredients

* 2 8oz bags of Morning Star Meal Starters Chik'N Strips
* couscous - wheat - near east (dry/unprepared), 0.75 cup
* 10 oz jar Artichoke Hearts, marinated in sunflower oil, quartered
* 4 green onions, sliced in 1 inch pieces
* 1/2 medium red bell pepper, thinly sliced
* 1/2 cup Kalamata pitted olives
* 1/4 cup crumbled Feta Cheese
* Vegetable Broth, 1 cup
* Smart Squeeze Nonfat Margerine Spread, 1 tbsp
* Garlic, 1 clove (minced)
Directions
1. In small saucepan combine broth, onions, margarine and garlic. Stir in couscous. Remove from heat. Let stand, covered, for 5 minutes.
2. Drain artichokes, reserving marinade. In large skillet cook bell pepper in 2 tablespoons of reserved marinade over medium heat for 1 minute. Stir in Morning Star Chik'n strips and artichokes and one tablespoon of remaining marinade. Cook and stir for 1 to 2 minutes more or until heated through.
3. Spoon couscous mixture onto 4 serving plates. Top with chik'n mixture. Sprinkle with olives and feta cheese.
