Ingredients

    2 cups celery diced
    1 large onion diced
    5 cloves garlic, diced
    yellow and red peppers, diced
    olive oil
    fish
    shrimp
    water
    brown rice
    salt, pepper and other seasonings as desired


Tips

Many kinds of fish work for this - tilapia, orange roughy, catfish. Fresh corn and tomatoes can be used if available.


Directions

add diced vegetables to pot with small amount of olive oil. saute briefly. Add 1 can diced tomatoes; 1 can tomatoes with chili (rotel). Add can of corn. Rinse all cans and add full cans of water to pot. Add additional water to pot as needed. Add shrimp and fish. If shrimp and fish are large, cut into bite-sized pieces. Add two cups brown rice or barley. Cook until done. Season with salt and pepper to taste.
