Introduction

Ingredients

    3 Tbs. Olive Oil
    1 Tbs. minced garlic (jar)
    2 onions, diced
    1 eggplant (diced)
    2 zucchini's, diced
    2 yellow summer squash, diced
    2 cups of fresh mushrooms, sliced
    2 yellow peppers
    2 red peppers
    1 green pepper
    1 lb of raw shrimp
    1/4 cup of Marsala or other red wine
    1/2 cup of white wine
    3 Tbs. Badia (brand) Complete Seasoning (found in ethnic isle at most groceries)
    3 Tbs. Old Bay Seafood Seasoning
    2 tsp. Black Pepper

Tips

I added more Old Bay to my bowl before eating but that would have been too much for my kids. We absolutely LOVED this dish, hope you do too! Use whatever veggie's your family loves and make it your own!


Directions

Put olive oil in pan on med/hi heat and then add diced onions, all diced peppers, squash, zucchini and eggplant. Put in minced garlic and toss all together. Add both red and white wine then mix in the seasonings. (You can add more or less of each, to taste. These measurements are approximate.) Cook for about 25 mins or until 5 minutes BEFORE desired veggie crispness. Add the shrimp and mix together and cover for about 5 more mins.

Serving Size: Makes 8 large servings
