Ingredients

    4-6 Patty Pan Squash, thinly sliced, diced
    Red Ripe Tomatoes, 1 large, diced
    S&W Black Beans in mild jalapeno sauce, 15 oz can
    Scallions, raw, 3 small, chopped
    Sweet Corn, Fresh, 2 ear, kernels removed and roasted
    Avocado - Add fresh to each serving

    For the Dressing:
    Cilantro, 1/2 cup, minced
    Lime Juice, 2 tbl
    Agave Nectar, 2 tbl
    Olive Oil, 2 tbl

Directions

Combine squash, tomatoes, black beans, scallions, and sweet corn in a bowl.

Mix dressing ingredients; add to vegetables.

Add chopped avocado to each serving when ready to eat.

1 cup per serving
