Introduction

Lower fat than American Pancakes. Traditional English pancakes are much flatter and less fluffy. Lower fat than American Pancakes. Traditional English pancakes are much flatter and less fluffy.
Number of Servings: 8

Ingredients

    2 eggs
    110g plain flour
    200ml semi-skimmed milk
    75ml water
    -----------------------------
    8tsp olive oil
    -----------------------------
    16tsp sugar
    8tsp lemon juice

Directions

-Whisk eggs, milk and water together.
-Sieve flour into a separate bowl.
-Gradually stir wet mixture into flour.
-Add 1tsp olive oil to a very hot pan, then add about 2-3tbsp of the batter and swirl the pan so it spreads out.
-The pancakes should be just going brown in patches. Once the base of the pancake is cooked, flip it onto the otherside, preferably by flipping through the air (otherwise it's just not traditional!)
-Serve each pancake sprinkled with 2tsp sugar and 1tsp lemon juice then rolled up and eaten in slices of the roll. The messier the better!

Each serving is 1pancake, but you probably won't be able to stop at 1.

    great, you saved my pancake day! it's great to see some "proper" pancakes in the midst of all these yanks (I'm kidding)! I made mine a little more diet friendly by using a good non stick frying pan and cooking spray and just adding one teaspoon of sugar per pancake. then ruined it by eating all 8! - 2/24/09

    You could always sprinkle splenda instead of the sugar to cut even more calories.
