Introduction
This is a lighter, most delicious version of my best (full-fat) potato salad. The Miracle Whip gives it a sweeter flavor with no added calories, and with the added hard boiled egg, it has the taste and texture of deviled eggs. Greek yogurt is my go-to substitute to make anything creamy but not suffer the caloric consequences of heavy cream. Most people probably won't even notice the cauliflower substitution! Ingredients

Cauliflower (3 cups)
Greek Yogurt (1/2 cup)
Miracle Whip (2 tbsps)
Diced Dill Pickles (3/4 cup)
Hard boiled Egg (1 cup)
Paprika (1 tbsp)
Salt & Pepper to taste
Tips
I like to add different things to vary the dish, each time I bring it to a picnic or have it at home. This is the classic version, but sometimes I add spicy peppers, garlic, red onions, peas, dijon mustard, or light mayo instead of Miracle Whip.
Directions
Prepare the cauliflower in your microwave and remove/pat dry any excess water from steaming.
Mix together almost cooled cauliflower with the rest of the ingredients, adjusting spice and portions as you prefer. Use only egg whites if you want an even healthier dish.
Serving Size: This makes 3 servings that would be served in addition to other things or a main course (or a whole meal if you're preparing for a race and need to carb up!)
