Ingredients

    6 cups veggie broth
    2 medium carrots (sliced into rounds)
    1 cup red lentils
    2 medium/large onions
    4 cloves of garlic
    2 tbls olive oil
    2 tbls red wine vinegar
    1 bay leaf
    2 tbls italian seasoning

Tips

Onions and lentils will break down and it will take on a gruel looking consistency. Don't worry, it's supposed to and is delish! Also freezes well!


Directions

Dice onions and garlic and saute in olive oil. Once onions and soft, add the broth, lentils, carrots, bay leaf, italian seasoning. Bring to a boil then turn heat down low and cover pot. Let simmer 1.5 hours. Remove bay leaf and add red wine vinegar. Enjoy!
