Introduction

Root vegetables roasted in the oven (or can grill them in foil) Root vegetables roasted in the oven (or can grill them in foil)
Number of Servings: 4

Ingredients

    4 small beets ( I used 1 large yellow beet)
    4 small red potatoes
    1 medium carrot
    1 small onion
    2 tablespoons of olive oil
    Salt and Pepper to taste

Directions

Use baking pan with lid.
Cut veggies up into chunks
spray or stir in olive oil
sprinkle salt, pepper and other herbs as you want
Cook in oven 350 degrees F. for one hour.
