Introduction

This salad can be served hot or cold. This salad can be served hot or cold.

Ingredients

    Cook the Quinoa as directed on the box. Since I was cooking for a crowd, the whole box was used. Cut the tomatoes in half, dice the cucumber and the red peppers, finely chop the green onions (scallions) and mix in with the cooled Quinoa.

    In a small bowl mix together the balsamic vinegar, oregano, lime juice, olive oil. Salt and pepper to taste.

Tips

This salad can be made with any veggies you like. I just used what was on sale. If you have grilled veggies left over, it is even better. If you are vegetarian, substitute veggie broth for the chicken stock. I used fresh oregano and fresh limes.


Directions

The instructions on the box state to cook for 10 - 15 minutes or until the liquid is absorbed.
