Introduction

Number of Servings: 8

Ingredients

    1 pound fresh kale, chopped
    2 medium onions, chopped
    3 cloves garlic, minced
    1 quart whole canned tomatoes (home canned preferred)
    2 tbsp extra virgin olive oil
    salt and pepper to taste

Tips

if not using home canned tomatoes, you may want to splash some lemon juice to the dish at the end.

This is also good as a leftover, tossed with some whole wheat pasta.


Directions

Heat 2 Tbsp Olive Oil in pan over medium heat.

Chop turkey bacon and add to oil, cook until brown.

Add chopped onions and garlic, cook until onions soften and begin to brown.

Add kale and cook until slightly wilted.

Crush whole tomatoes with your hand and add to kale with tomato liquid. Cover and cook for 1 hour, stirring occasionally. Adjust heat to just simmer.

Serving Size: makes 8 1-cup servings
