Ingredients

1 1/4 lbs beef chuck, cut in 1 inch cubes, or stew meat
3 Tbs white flour
2 cloves garlic, minced
3-4 small to medium potatoes, cut in wedges
1 medium onion, cut in large pieces
2 large celery stalks, sliced (include some of the greens)
10-20 whole baby carrots
8 oz beer
1/2 cup water
Sea salt
Pepper
1 cup frozen peas
Dried parsley
Tips
Dark ale makes the best broth but any beer will do. I've also made the recipe with just water. The broth is still very good but not as rich and flavorful. I didn't specify salt and pepper amounts as I use very little and leave that to your taste.
Directions
Place the uncooked beef in a large crock pot. Sprinkle with the flour and toss to coat. Arrange the beef in the middle of the crock pot and distribute the garlic on top. Arrange the vegetables, except for the peas, around the beef.
Add the beer and water. Sprinkle with salt and pepper to your tastes. Cook on low setting for 8 hours.
When finished, add the peas and stir. Sprinkle with parsley. Turn off crock pot and let sit for 20 minutes before serving.
Serving Size: 5 or 6 servings, about 1.5 cups each
