Ingredients
-
2 lbs. Fresh Brussel Sprouts
1 tsp. Garlic Powder
1 tsp. Ground Thyme
1 tsp. Oregano
1 tsp. Salt & Pepper
1/2 cup Pine Nuts
1/4 cup Olive Oil
1/2 cup Balsamic Vinegar
Tips
The serving size for this dish is an approximation. Sometimes when you clean up the sprouts you end up with less or more depending on how the outer leaves look. Sometimes I buy 3 lbs. of sprouts so that I end up with 2 full pounds by the time they're cleaned and trimmed.
Adding a little extra of anything won't hurt this recipe - I usually sprinkle a little extra of each of the herbs on top of the mixture before I put it in the oven.
Directions
Pre-heat oven to 425 degrees.
1) Trim and peel brussel sprouts. Put prepared sprouts in cold water to soak. Once all sprouts have had a chance to soak for a few minutes, dump water out of bowl or pour into a colander.
2) Cut sprouts in half and put in a clean, dry, medium sized bowl.
3) Add garlic powder, thyme, oregano, and pine nuts to sprouts and stir to coat.
4) Add oil and balsamic vinegar and stir well.
5) Place in baking dish (it doesn't matter what size or type, just as long as all of the sprouts fit - I usually use a 9x9 glass dish but anything works).
6) Bake for 45 minutes, pulling out to stir after the first 20 min.
