Ingredients

1 Large Onion (diced small)
1 Large Red Pepper (diced small)
3 Tbls. Extra Virgin Olive Oil
8 Hot Italian Sausage Links (casing removed)
1 pound of Red Lentils (dry)
1 can (16 oz.) Hunts Traditional Spaghetti Sauce
t tsp Chicken flavor Better Than Bouillon
6 cups of water
Tips
If you're not watching your waistline, this would be delicious served with fresh biscuits.
Directions
In a large sauce pan, saute onions and (1/2 of the red peppers) in olive oil. When onions become slightly translucent, add spaghetti sauce and simmer. Mix the Turkey Sausage with remaining red peppers and form into small (1 inch meatballs). When soup begins to boil, drop meatballs in the soup and cook for about 10 minutes. Add 6 cups of water and red lentils. Bring to a rolling boil and let cook for about 10-15 minutes before reducing heat to low. Cover and let simmer about an hour and a half, stirring occasionally to be sure lentils do not stick to bottom of pan.
