Ingredients

    1/2 cup canned pumpkin
    1/2 cup canned coconut milk, "separated"
    1/4 cup unsweetened cocoa powder
    3/8 cup brown sugar
    1 tsp vanilla extract

Tips

This produces a relatively sweet pudding with a slight "Cool Whip" flavor; reduce the sugar and increase the cocoa powder for a richer pudding.


Directions

Before preparing, chill can of coconut milk in the fridge, which will cause the fat to solidify.

Take 1/2 cup of the coconut, solid and liquid, separating. Whip solids with hand mixer until you have medium to stiff peaks.

Blend cocoa, coconut liquid, pumpkin, sugar, and vanilla with a rubber spatula until smooth.

Fold in whipped coconut until a smooth pudding consistency. Chill before serving
