Number of Servings: 6

Ingredients

    2 cups cooked navy beans
    half cup each of onion, celery, and carrot
    half cup dominican sofrito
    half cup cooked mushrooms
    16 grape tomatoes
    4-6 cups water
    bay leaf
    salt and pepper to taste
    siracha to taste

Tips

always cook a batch of beans to add to quick dishes like this or salads or even puree for dips and sandwiches. Beans are the healthiest protein known to man.


Directions

Saute the veggies in sofrito and add beans. cover with water, bay leaf, and salt and pepper. cook for 40 minutes. add siracha sauce to taste
