Ingredients

    2 cups Brocolli
    2 cups Cauliflower
    1/2 cup each sliced carrots, celery, onion
    1 cup chicken broth
    1 cup skim milk
    1 tbsp butter
    2 cups sliced mushrooms
    1 garlic clove
    1 tbsp parsley
    salt & pepper to taste

Tips

for a chunkier soup, leave some of the vegetables whole instead of processing them all in blender, the more you puree the creamier it will be. I like a lot of pepper


Directions

bring all veggies except mushrooms to boil in chicken broth (may need to add water to cover) salt & pepper
until soft, 15-20 min. add milk. pour in batches into a blender and process until smooth. In 2 1/2 quart saucepan melt butter, add garlic and mushrooms, saute until lightly browned. Add pured vegatable mixture and parsley to mushrooms and cook stiring occasionally until mixture is cooked thoroughly 5-10 min.
