    Ingredients:
    Eggplant, fresh, 1 eggplant, unpeeled (approx 1-1/4 lb (remove)
    Zucchini, baby, 1 large (remove)
    *Healthy Harvest Whole Wheat Lasagna, 8 oz (remove)
    Ricotta Cheese, whole milk, 2 cup (remove)
    Mozzarella Cheese, whole milk, 2 cup, shredded (remove)
    Tomato Sauce, 3 cup (remove)

Directions

grate eggplant and zucchini )salt eggplant and set aside. rinse before use.

layer sauce on bottom of 9x13 baker.
place lasagna on bottom and layer other ingredients, veggies, cheese and sauce. Repeat and top with cheese.

Bake.
