Introduction

Ingredients

    1/2 cup chopped onion
    2 stalks celery, chopped
    1 carrot, diced
    2 tbs butter
    1.5 tsp curry powder
    4 cups chicken broth
    1/2 apple, cored and chopped
    1 skinless, boneless chicken breast half - cut into cubes. Can also use leftover chicken without the bones and skin
    salt to taste
    black pepper to taste
    1 dash dried thyme

Tips

Some Mulligatawny recipes include flour, heavy cream, and rice. I did this recipe without those ingredients because it adds needless fat and calories and the soup is still delicious without it. Sometimes I do add potatoes or cooked brown rice to bulk it up.


Directions

Saute onions, celery, carrot, and butter in a large soup pot. Add curry and cook 5 more minutes. Add chicken broth and bring to a boil. Simmer about 1/2 hour, stirring occasionally. Add apple, chicken, salt, pepper, thyme. Simmer 15 - 20 minutes.
