Scrumptious! I used La Victoria cilantro salsa, med. hot; I added more cumin & oregano than called for, plus lemon pepper & bay leaves. I used my own broth from boiling a whole chicken recently. Will definitely get more than 4 servings from this batch, so I'm counting 0.75 each when tracking. - 3/2/09

I made this last night and took some with me to work today for lunch. It is really good and easy to make. I'll definitely make it again. Nice twist with the sweet potato. - 1/6/09

Excellent! I left out the corn, just because I only like corn on the cob. Subsituted with snap beans instead. Thanks for a great combination! - 1/1/09
