Ingredients

    3 TBLS Coconut oil
    2 Large Carrots - diced
    1 Small Onion - diced
    2 Celery Stalks - diced
    4 garlic cloves - minced

    1 15 oz Can Black Beans - drained and rinsed
    1 Cup uncooked Quinoa
    2 Cups Chicken/Vegetable Broth - (Water can be used instead.)
    3 TBLS Curry Powder
    2 TBLS Turmeric
    2 TSP Sea Salt
    1 TSP ground white pepper (Black Pepper can be substituted)

Directions

In large skillet or sauce pan sautee Carrots, Onion, Celery, and Garlic in Coconut oil.
Once tender add Black Beans, Chicken Stock, and Seasonings.
Bring to a boil. Add Quinoa. Cover and cook an additional 15 minutes on low heat.
Fluff with a fork and serve.

Serving Size: makes 6 1-cup servings
