Introduction

This is a great side dish for a low carb or gluten free diet. This is a great side dish for a low carb or gluten free diet.
Number of Servings: 4

Ingredients

    I package frozen cauliflower, cooked
    3 celery stalks, diced
    4 T dill pickle relish
    1 T dried parsley
    green onions, diced - or - 2 T dried minced onion
    3 hard boiled eggs, diced
    4 T mayonaise
    salt and pepper to taste

Tips

You can tweak this recipe to your taste. Add dill weed, curry or paprika. Season to your taste.


Directions

Lightly cook frozen cauliflower (do not overcook or it will develop a strong cauliflower taste) and refredgerate until cold. Use a salad spinner to remove all excess water and then mix in remaining ingredients.

Serving Size: Makes about 4 (1-cup) servings
