Ingredients

1.5 lbs Pork Cube Steak
8 oz pineapple chunks in non-sweetened juice
4.5 cups frozen brocoli florets (1 bag)
3 bell peppers (red, yellow, orange for color)
8 oz can water chestnuts
2 T olive oil
2 T reduced sodium soy sauce
1 t crushed red pepper flakes (more or less depending on if you want it sweet and spicy, or just sweet, or blazing :) )
Tips
Makes 4 real servings, I just had it say 8 because typing 2 into servings is easy enough when adding to tracker.
Directions
Cut pork into bite sized pieces
mix soy sauce, red pepper, and juice from the pineapple together to form a marinade.
Save the pineapple bits for later
Add pork to marinade and mix well
Leave in fridge for at least two hours
cut peppers into strips
Heat 1.5 T olive oil in large fry pan or wok
Add pork and stir fry until cooked thoroughly
removed pork from pan
Heat .5 T in pan
Add veggies and stir fry 2-3 mins
Add pineapple to pan for 2 min
Add pork back into pan until everything is heated evenly
mix well and serve
Serving Size: makes 8 "diet" portions best served over brown rice, or 4 stand alone portions.
