Number of Servings: 24

Ingredients

    2 blocks of low fat cream cheese
    1 cup shredded 4-cheese mexican blend cheese
    1/2 c drained crushed pinapple
    1/4 c finely diced scallions (include green and white)
    3/4 c finely chopped pecans

Tips

For an added kick, you can substitute jalapenos for the scallions.


Directions

Combine cream cheese, shredded cheese, drained pineapple, & scallions. Mix to blend all ingredients well.

Lay out a large piece of wax paper or plastic wrap over a bowl making sure it overlaps the sides of the bowl. Put chopped pecans in the bottom. Scoop cheese ball mixture over the pecans. Bring up sides of wrap or wax paper to form a ball. Put in fridge for a few hours, or overnight.

Unwrap cheese ball and place in bowl, pecan side up. Serve with crackers or veggies (carrots & celery are great with this!)

Serving Size: Makes one large cheese ball approx 6" diameter
