Number of Servings: 2

Ingredients

    2 boneless, skinless chicken breasts
    2 cups cooked whole wheat pasta
    1 lime
    3 cloves garlic
    salt to taste
    1 tbsp olive oil

Directions

Cut the chicken into bite size pieces.
Saute' pieces in 1/2 tbsp olive oil (reserve the other half for later), 2 cloves garlic (crushed), and the juice of half of the lime.
While this is cooking, prepare your pasta according to cooking guidelines.
When all has finished cooking, drain the pasta and add the chicken to it.
Pour remaining olive oil, the juice of the other half of the lime, and the last clove of garlic (crushed) over the pasta and chicken.
Add a dash of salt to your taste.
Before adding the salt, do a taste test first, you might find that the fantastic taste of garlic and lime are enough! There you go! A fantastic meal for 2!

    For a Greek flavor, add a pinch of crushed dill and some cracked black pepper as well. (Think Gyro Tzatziki sauce flavor.) Stir in a Tbsp. of low fat sour cream into the lime juice to make a sauce for the pasta. - 10/29/07

    This recipe is great cuz it leaves room for interpretation. The basic flavor combination let you get creative with the vegetables and other spices to create and recreate - want Mexican? Add some corn, cumin, and chili powder. Italian? Add some zucchini, tomatoes, basil and oregano. It's flexible! - 7/31/12

    I used lemon because that's what I had on hand. I didn't trust the nutrition facts, they seem a little off. I recalculated, but didn't save. 1 serving is about 10 WW points+ depending on how many ounces of chicken your use. I want to try it w/ broccoli, red pepper flakes and possibly asparagus. - 2/13/11
