Ingredients

    1 lb ground chicken
    1 large onion
    1 medium green bell pepper, seeded & chopped
    3 cloves garlic, chopped
    1 can cannellini beans (white kidney beans), rinsed
    1 can black beans, rinsed
    1 can red kidney beans, rinsed
    1 can diced tomatoes
    12 can enchilada sauce
    4 1/2 oz diced green chiles
    1/4 cup chili powder
    2 tbsp Worcestershire sauce
    1 tbsp molasses
    1 tbsp packed brown sugar
    1 tbsp ground cumin

Tips

You can substitute chili sauce for enchilada sauce if you would like a sweeter tasting chili and add liquid smoke for a smokey flavor. This recipe tastes great with cornbread! Try blending the ingredients the night before then simply insert pot into slow cooker before work in the morning and your chili will be waiting for you when you get home ;)


Directions

Place the chicken, onion, bell pepper and galic in a slow cooker, stir with a fork to blend. Add the beans, tomatoes, enchilada sauce, green chiles, chili powder, worcestershire, molasses, brown sugar and cumin. Mix well. Cover and cook until the flavors are blended and the chili thickens slightly, 4-5 hours on high or 8-19 hours on low.

Serving Size: makes approximately (8) 1 1/4 cup servings
