Ingredients

    4 oz Fresh Salmon filet
    3 cups raw baby spinach
    1 tbsp sliced thin scallions
    1 tsp grated fresh ginger root
    1 minced garlic clove
    1/4 of a lemon (juice)
    1 tsp sugar (or substitute)
    Ziplock Steamfresh bag (optional)

Directions

Prepare a pot to steam fish and spinach. I prefer to use ziplock steamfresh bags. If you use the bag just stuff in all the spinach and put the fish on top last.

Add ginger, garlic, lemon, sugar, and soy to a small sauce pot and bring to a boil over medium heat. Set aside.

Steam spinach and fish until fish is cooked through and flaky. About 5 mins. If using steamfresh bag microwave 3 mins and let sit one min.

Place salmon and spinach on a plate salmon on top and drizzle sauce mixture over the top. Sprinkle scallions over the dish. It's that easy and soooo good.
