Introduction

Spicy and warm for fall and winter evenings. Spicy and warm for fall and winter evenings.
Number of Servings: 12

Ingredients

    4 Boneless, Skinless chicken breasts
    2 cans Ro-Tel tomato and green chiles
    2 cans black beans, drained
    3 can green enchilada sauce (I use medium La Preferida)
    1/2 red onion
    1 carton 33% less sodium chicken broth
    1 packet ranch dressing mix

Tips

If I am at home while this cooks, I start with just the broth, chicken, and ranch. I add the rest once I have shredded the chicken. Otherwise I just throw it all in and go.


Directions

Put all ingredients (except beans) in crock pot until chicken shreds easily. About a 1/2 hour prior to eating add black beans. Enjoy!
