Ingredients

Eggs, or Egg Sustitute (6 large)
Cottage Cheese, low fat or fat free (4 oz)
Low fat Turkey Sausage, Ham or Turkey Bacon, cooked and crumbled (4 links, or strips chopped)
Reduced Fat Bisquick Baking Mix (1 cup)
Green Onion, bunch diced small
Mushrooms, diced small (1 cup),Spinach (drained and chopped), or any combination of veggies on hand, diced small. (to equal 1 cup)
Shredded cheddar cheese (about 1/2 cup)
Salt, Pepper, Cayenne (couple of dashes) to taste...
Tips
you can substitute milk or cream in place of the cottage cheese, however I find the cottage cheese, gives these more body...
Directions
Preheat oven to 350
Spray one 12 cup, and one 6 cup muffin tin with cooking spray.
Place the crumbled veggies and meats equally into the bottom of the sprayed tins.
Crack eggs into a large bowl, whisk with a little salt and pepper. Add the 1/2 cup of cottage cheese until mixed well. Add the Baking mix and stir until moistened. Add salt, pepper and cayenne pepper to taste. Fill wells about 2/3 full, top with shredded FF cheddar if desired and bake 20-23 min until just turning a little brown on top (insert a knife into muffin, if it comes out clean they're done, if not bake at 2 minute intervals until the knife comes out clean.
