Ingredients

    2 cans of diced tomates with chilis
    1 six oz can of tomato paste
    1 can black beans
    1 can kidney beans
    2 lbs. chicken breast
    1 ten oz bag of frozen corn
    1 onion
    1 green bell pepper
    1 red bell pepper
    2 fresh jalapenos or 2 canned chipotles in adobo
    1 tbsp cumin
    1 tbsp mexican chili powder
    1 cup chicken broth or stock
    salt
    pepper

Directions

add all ingredients to crock pot and cook on high for 6 hours. Shred the chicken, return to the crock pot, and cook another 30 minutes before serving. Serve with lite sour cream and/or avocado.
