Introduction

Ingredients

    Banana, fresh, 1.25 cup, mashed
    3 eggs
    Canola Oil, .2/3 cup
    Daisy Fat Free Sour Cream, 1 cup
    Vanilla Extract, 1 tbsp
    Cinnamon, 2 tbsp

    Flour, white, 3 cup
    Granulated Sugar, 1 cup
    Flax Seed Meal (ground flax), 6 tbsp
    Baking Soda, 2 tsp
    Salt, 2 tsp

    Chocolate Chips, Semi-Sweet, 1 cup (152 grams), 1/2 bag
    Walnuts, 1/3 cup, chopped

Tips

This recipe is really quick. With in 15 minutes the muffins are in the oven and baking.


Directions

Preheat oven to 350 degrees and bake for 15-22 minutes.

In a blender mix together (5 or 6 ripe bananas, eggs, Oil, Sour Cream, Vanilla extract and ground Cinnamon.)

In a large mixing bowl --mix together the dry ingredients (Flour, Sugar, ground flax, Baking Soda and Salt.)
Pour banana mixture over dry ingredients and mix with a spoon. Once thoroughly mixed add in the Chocolate Chips and walnuts.
Scoop mixture into muffin pans (Makes 3 dozen).
Bakes 15-22 minutes or until done.
