Introduction

Ingredients

1 large bunch of Kale, chopped
4 cups of cooked rice (I used basmatti)
1/2 red onion
4 tbsp pickled ginger, chopped
1/2 cup peanuts
4 dashes of Cayenne Pepper
1 Tbsp Tahini
2 Tbsp Soy Suace
1 Tbsp Honey
2 Tbsp RICE Vinegar
Tips
I made the kale and peanut mixture in the morning before work and then just cooked the rice when i got home. Made it a fast dinner. :-)
Directions
Cook Rice
Prep Dressing
Puree Peanuts with a couple tbsp of water.
Put Peanut mash, 2 tbsp of pickled ginger, cayenne, honey, soy sauce and vinegar in a bowl and stir thoroughly.
Heat sesame oil in a sauce pan add in onion and the rest of the ginger. Once the onions are softening add in the kale. Do not over cook the kale. Allow it to still have a nice crisp.
Mix the Kale dish into the peanut sauce. Serve over a bowl of rice.
