Ingredients

*All Purpose Unbleached Flour, 1 cup
*Whole Wheat Flour, 0.25 cup
**Flax Seed Meal (ground flax), 3 tbsp
*buckwheat flour, 1 oz
* Butter, Vegan: Earth Balance, 3 tbsp
*Vanilla Essence 1tsp
Brown Sugar, 3 tsp brownulated
Baking Powder, 3 tsp
*Lactaid Fat Free Milk or buttermilk, 1 cup
Water, tap, 1 cup (8 fl oz), more if necessary till desired consistency
Directions
Sift all dry ingredients into a mixing bowl. Mix.
Melt butter in microwave.
Make a hole in middle of dry mixture and add the milk slowly, stirring continuously with a whisk to avoid lumps. Add butter and enough water to desired consistency. Add vanilla essence. Mix until smooth.
Serving Size: makes approximately 4 - 5 large pancakes
