Introduction

Adapted from a higher calorie Betty Crocker recipe. I substituted so many ingredients to utilize what I had on hand that it is pretty much a new recipe. Ingredients

    2 cup water
    2 Tbsp onion flakes
    1 Tbsp garlic powder
    2 cubes chicken bouillon
    1 tsp crushed red pepper
    1 tsp ground oregano*
    1 tsp ground thyme*
    1 tsp dried parsley*
    1/2 cup dried lentils, sorted and rinsed
    1/2 cup uncooked brown rice

    *1 Tbsp of Italian herb seasoning mix can be used instead of the oregano, thyme, and parsley

Tips

The original recipe called for fresh onions and garlic sauteed in 2 Tbsp of butter until onions are tender. The sauteed mixture is then added to the other seasoning and water. It also called for 1 cup of coarsely chopped green bell peppers and 1/2 cup of shredded mozzarella cheese to be sprinkled on rice and lentils before serving.


Directions

In 2 quart saucepan, add seasonings, bouillon and water. Bring to a boil and stir until bouillon cubes are dissolved.
Stir in lentils and rice. Bring back to boiling then reduce heat. Cover and simmer about 50 minutes, adding more water if needed, until rice is tender and liquid is absorbed.

Serving Size: Makes 4 one-cup servings
