Ingredients

    3 TBS Olive Oil
    1 Large Onion (about a lb.)
    3 Medium Bell Peppers
    3 Cloves Garlic
    1/2 tsp Salt
    1/4 tsp Pepper
    1lb Italian Sausage
    1 Loaf French Bread

Tips

Make sure at least one of your bell peppers is green - it balances out the sweetness of the cooked onions.

Toast your bread if you'd like in the pan you used for the onions and peppers! It will soak up all the leftover goodness.


Directions

Cut onion and peppers into long thin strips and mince garlic. Cut bread into 4 even pieces.

Warm olive oil in a big pan until it slides around easily. Add onion, peppers, garlic, salt and pepper. Cook until the onions are carmelized. (golden brown color)

While waiting for the peppers and onion to cook, broil the sausage for about 5 to 6 minutes on each side, keeping them about a half a foot from the broiler coils.

When the sausage is done, let it rest for a few minutes and then cut them in half length-wise.

Make 4 sandwiches using bread, pepper mixture, and sausages. (2.5 of the halved sausages, and a quarter of the pepper mixture.)
