Ingredients

    1/2 cup coconut flour
    1/2 cup finely shredded coconut
    2 tbsp coconut oil (you could use butter)
    2 eggs
    1/4 cup applesauce (unsweetened)
    1 tsp cinnamon
    1/2 tsp bicarbonate of soda
    1/2 baking powder
    1 cup blackberries (fresh or thawed)

Tips

The original recipe called for 2 ripe mashed bananas in place of applesauce and added 1tsp vanilla essence.


Directions

Preheat oven to 350ºF/180ºC/gas 4 and grease an 8x8 baking pan. Mix together the dry ingredients in a large bowl. Mix the wet ingredients in another bowl, whisking to fully incorporate. Carefully add the wet ingredients to the dry, stirring together. The batter should look like a dry cookie batter. If it is too thick and dry, add a little milk (or nutmilk). Fold the berries into the batter and then pour into the prepared pan. Bake for 40 mins until the batter begins to firm and the cake starts to turn golden. Remove from the oven and allow to cool in the pan.
