Ingredients

4 medium sweet potatoes, peeled or unpeeled
1/4 cup almond milk
1/2 cup brown sugar
2 oz orange juice
2 medium bananas
3/4 cup chopped pecans
Directions
Boil sweet potatoes for about 25 mintues, until soft. Once soft, mash sweet potatoes with milk, cinnamon, 1/4 cup of the pecans, and a tablespoon of brown sugar. Place mashed potatoes in an oven safe baking dish.
Meanwhile, slice both bananas on a bias and shingle them on top of the potatoes. In a small sauce pan bring brown sugar and orange juice to a boil, stir constantly. Once smooth, drizzle over the bananas, and sprinkle the pecans. Place baking dish in over under the broiler for a few minutes, until bananas are caramelized. Enjoy!
