Ingredients

.5 cp butter
.25 cp sugar
1 egg beaten
.25 tsp almond extract (or lemon)
1.75 cp flour
3 tb cornstarch
.5 tsp baking powder
6 tb raspberry jam
powdered sugar
Directions
beat butter and sugar till creamy. beat in egg then extract. sift flour, cornstarch and baking powder blend with spoon and work with hands to form dough. cover with plastic and chill for 30 mins. Preheat oven to 350. grease cookie sheets. rolls out dough and cut out hearts. every other heart should have a smaller heart cut out of center. Bake until just browing. 8-12 mins. cool then fill with jam. top of cookies will have cut-out. sift powdered sugar over the top. a 2 inch cookie cutter should create 20 finished cookies. I've made these every year for valentines day as well as brunches and teas. This year I will try with substitutions. (sugar free jam, egg substitute, etc.)
