Introduction

Filling vegetarian chili. Filling vegetarian chili.
Number of Servings: 8

Ingredients

    Tomato Paste, 1 can (6 oz)
    Tomato Sauce, 1 15 oz can
    Beans, black, 1 15 oz can
    Beans, red kidney, 1 15 oz can
    Chickpeas (garbanzo beans), 1 15 oz can
    Yellow Sweet Corn, Canned, 1 15 oz can
    Water, tap, 4 cups
    Mushrooms, fresh, 1 cup, chopped
    Onions, raw, .25 cup, chopped
    *Diced tomatoes & Green Chillis Rotel, 10oz can
    Corn Starch, 2 tbsp.
    1 package of chili seasoning (such as McCormick's)

Tips

Serve with shredded cheese and a dollop of light sour cream.


Directions

Saute onions and mushrooms. Add tomato sauce and tomato paste, stir. Add water. Add all beans and corn. Bring to low boil. Add corn starch. Simmer until thickened, and beyond.
